I use an Ipad Air 2 which is very choppy but also use a MOTO-G. The question is, while flying, it sure would be nice to have a compass display on the video - just a simple North (N), South (S), etc pointer. I know the little window at the bottom is there, but man oh man, it sure would be sweet to just keep watching my video feed and see the direction.

Don't really need it. Just remember your takeoff orientation, and watch the maps ( Assuming you have them live or pre-casched) and all is good. Actually I find that easier than a simple compass.

Ok. What setting and/or to use Radar?

The radar display is what you see in the bottom left of the screen in this screenshot
