It seems to me that you were flying fast and also turning/banking. Correct?
As such I would fully expect the gimbal to tilt since the craft needs to bank substantially to make the turn.

Could try gimble calibration,not to uncommon does happen on occasion but shouldent really,,been there with p4,,not the strongest of motors for gimble and cam sometimes at speed or strong wind can alter the angle bad,,,does it do the same low and slow,,could possibly tilt cam down a bit so wind not catch it so much,,with drone on test that when try to move cam it's got bit of resistance to it,,,,if so I think ok unless moves very easy
