I have never tried to fly before home point it set. Max height is calculated and checked with respect to home point. So if home point is not set, what's the maximum height limit?

Fly your drone without your tablet apps. On your rc and drone, once link, do motor activation and just fly it.
Risk is...you do not have data feeds such as battery %. LOL!

How can I do? Do you know an App which permits to fly without using DJI GO or is only necessary to link RC and drone and then only do motor activation? Where I can find this app if it exists? Regards

If you have GPS it will set home point as soon as it has enough satellites.
If you blind the GPS with aluminium foil you are limited to 120 metres height
