Is there a way to save and find afterward the settings of our photos and videos so we don't need to write it down each time we're trying different settings like ISO, time exposure, etc...

The still photograph settings are stored in exif. There is just shutter speed, ISO and exposure bias. Any editor should show the details. One good free viewer is FSViewer which can view RAW files as well. Not sure about video.
Found this thread in my search. I'm hoping to be able to view my ISO & Shutter settings for some videos I took recently on my P3P. Has anyone figured out how to do this? I installed ExifTool but it only provided me with the following:
