I'm a bit confused on the Max Takeoff Altitude listed in my flight stats. As an example, mine says 627.5 feet yet I've never flown that high? Is that stat just each one of my take offs added up or something??

That's the highest altitude above sea level where you've taken off from.

Or maybe I've flow higher than 400 feet ;)

Ohh ok. Seems like an odd thing to have a stat for. I would prefer a "Highest Altitude AGL" stat.

Which in 99.9999% of the time is height AGL for the purposes of this point right?

Yes - when flying over flat (constant-elevation) terrain. You may have somewhat overestimated how common that is, but probably still a useful metric.

Good point - it is a weird, somewhat useless bit of info now that you have pointed it out, I'd forgotten about it [emoji848]
It's a fun stat if you live in mountains, I hope to get my max altitude over 14,000 feet this summer.
