I've not seen a tutorial but it's a PANO taken and stitched Vertically. Shouldn't be too hard to create.

Here's a link to a post I saw a while ago, it has written and video tutorials, but the style is a little different. Here's another video that seems to be more for drone work and looks like your images.

Those are pretty cool pics, that's a good part of that movie where the streets start folding back on themselves.
