So I crashed my phantom pro 3, replaced the body and it worked fine. Once. Next time I took it out the gimball/camera goes crazy.

Hopefully that link works.

The camera rests at an angle.it it just rotates back and.forth. remote error switches between nothing and ginball motor over load. Calibrating gimball fails.

I just replaced the ribbon cable from.logic board to gimball as it was a bit bentup. Didn't help. Any other ideas?

Definitely an issue with roll movement - yaw and pitch are moving, roll stays either limp or at a limit (hard to say which).
Try cleaning contacts or replacing the Gimbal Driver Roll board:
o-gs/dji-firmware-tools

which contacts? i'm thinking i may be getting in over my head and chasing my tail.

which contacts?
The ones which connect to Gimbal Driver Roll - to both Flat Film Wire and the Roll Motor.

EDIT: Btw, the usual cause of such problem is damaged Flat Film Wire (the long one which connects all elements of the gimbal together).

Try to disconnecting when the aircraft is on and 2 turn off the aircraft conect the gimbal cable again and turn on the aircraft again some times working
