Compass calibration would not work while wearing the Apple Watch. I tried 3 times and kept getting flashing red lights. As soon as I took off the watch the calibration worked.

I know the instructions say not to have metal objects near during calibration, but I never had a problem with wearing my past watch.

When flying my $1,000+ quadcopters, I always follow the instructions :)

Compas calibration working OK when I wearing Apple Watch. I have a 38mm sport aliuminium. Maybe stainless steel watch is causing problems ?

Aluminum is non magnetic.
Stainless Steel is also non magnetic but I suspect it's a "Stainless" alloy with some iron in it.
In any case, it has a battery in it and any electric current is going to generate a magnetic field.

So even if you can "successfully" calibrate your compass while wearing it, you shouldn't.
It's almost certainly throwing off the calibration by some amount.

I take my keys and everything else out of my pocket, take off my eyeglasses, and put my phone on the ground while calibrating.

Lessoned learned. The watch stays in the car.

Don't some of the apple watch bands have magnets on them?
