Taking firmware a few steps back

I've seen lots of threads about updating the new firmware but nothing about backing it up. Yes, I know how to use assistant 2 but it doesn't go back far enough and it has been a while since i did this last. Github is difficult if not impossible to figure out. Where else can I go to back up my firmware?

By back up...I mean revert to a previous version of firmware

Yeah...I don't get the same screen as he has and it's so confusing. My computer doesn't look anything like his so I have no idea where to go or what to do

Record a video showing what you see when you try to use the tool and perhaps someone who experienced the same thing will be able to assist.
