Is it OK to remove the sd card after power down and plug it into my computer for editing

That's perfectly fine. It's actually my favorite method to transfer videos and pictures over to my computer for storage or editing.

What does the card do other than storing photos?

Mainly photos, videos, and firmware if you do update

I was told the firmware was stored in the bird not the card. Do you know for sure or are you guessing?

I know for sure because I deleted it when I transferred the videos after the update was done. It was in the root folder of the SD card.
