Careful with HDR! It can make your photos look a little unreal (unless that's what you were going for). I'd love to see this shot without it..

In the iOS app, tap the button below the shutter button that looks like three lines with dots on them. A new menu will slide out from the left side of the screen. Move the shutter setting all the way to the right to a value of 7". To keep this setting, you MUST slide the menu back to the left to close it and save the settings.
