How do I set a POI (point of interest) spot on the ground then fly right at it (keeping the same altitude or not), then right by it, and have the camera always looking at the spot without trying to do this maneuver manually?

The simple answer is to use a third party app, i.e., Litchi or AutoPilot. You may also be able to accomplish this with the new DJI GS Pro, although I don't as of yet care for the DJI product. The first two third party apps will set you back a few bucks, but well worth it IMO.
