As title really,

ive always taken all my photos with the HDR option, but should i be?

What is the difference between the HDR & SINGLE SHOT option?

And can you / do you still get a good photo from standard single shot?

I've not tried this yet with my Phantom 3, however, I can translate HDR for you.

HDR, or High Dynamic Range, requires anywhere from 3 - 5 images all taken at different exposures. You can then use image editing software to put those three images together and highlight the best parts of each photo. In the case of HDR on smartphones, your phone does all the work for you—just snap your picture and it'll spit out one regular photo and one HDR photo. The result is something that should look more like what your eyes see, rather than what your camera sees.

I suspect the drone acts the same as a smart phone with HDR.
 
It does the HDR work internally but I have found shooting in AEB and combining them manually gives me MUCH better images and a much better HDR product.
