So I just updated the firmware with the assistant 2 program and realized that I was actually two firmwares behind. Just wondering if it's on to skip the last or should I install it and then install the latest?

The newest version should have everything from the version that you skipped. But, it wouldn't hurt to install both if you have the time.

I don't believe these are firmware updates per se, more of a reflash to the latest firmware. As msinger said, you'll be fine going straight to the latest.
