When I fire up my phantom 3 Standard how many satellites should I have? I’m in a open field with no obstructions, and I only show 7.

Made me curious..I got 10 showing in built up area with my p3s,,can't say I done compass for a while but have you tried that

Amount of satellites is going to vary according to your location, time of day and just what you have around you.
Once I leave the ground I normally pick up several more.

Ah it was just a idea,,I had feeling it probably not help but thought it might help phantom to locate sats better,,,,I just go sit in the dunce corner for a while,,anything worth a crack with for the phantoms ,nothing' is a straight forward fix as simple as it may be

Yes I recalibrated the compass now and it shows between 6 and 9 satellites.
Recalibrating the compass won't make any difference to the number of satellites you see.
Your P3 standard only uses US GPS satellites (it doesn't see Russian Glonass sats) and it can only see those which are in your skyview.
The number your drone will acquire will vary as the sats are constantly moving in their orbits and the earth is rotating within the orbits of the satellites.
The numbers you mention aren't abnormal.
