revving up while on ground

hello there
ive got a technical question.. ive seen someone in a video holding a p4 without props.. armed the motors.. and by the time it sat it on ground drone revved up till max motor speed.. he couldnt disarm it when trurned it upside down..
my question is why it did this?? it already knew that there were no props (on screen message shown on video) .. and why it revved up without cut the motors when it was turned upside down??

The gyro sensors detected the motion and the flight controller directs the motors to attempt to counter that to maintain stable, level flight or hovering.
That there were no props doesn't prevent that.
Because there are no props, it doesn't correct the motion and the flight controller spins the motors harder to try to fix the problem.

is that the same as it revs up when handcatching?? it usually gives negative values in height while revving up a little.. dont know if baro has to do sth with the revs..

It revs up when handcatching because it's trying to hold position and resists any movement.
This is unrelated to the height reading.
It's common and normal for the height reading at the end of a flight to vary from the height at the start of the flight due to small changes in air pressure over the duration of a flight.
