It would seem, from your story, that the wife, was the instigator for all of this. What I am wandering as most others are, is, what were they doing or have done, that they are so scared of others finding out that they have to resort to taking a threatening posture.

Absolutely horrible that the guy was so aggressive and pulled a gun. Out of order and illegal I would imagine (from UK so don't know your laws). No question this is wrong regardless of your actions.
However, that wrong does not make what you did right imo. Flying that close to another's house doesn't seem right to me. I own and have flown quads and other RCs for years, just because I could fly it in my back yard to show off to my friends doesn't mean I should. Especially when so close to folks homes.
I wouldn't like some dude climbing a tree overlooking my house with a camera. He might not use that camera, but I can't say I'd be happy and would call the police (not pull a gun!).
How is a quad with a camera over my house any different to this? You might not use the camera but you could. I don't have anything to hide, but I do have children. Which of you would want someone with a camera hanging around over / close to your house with kids in it? If you say you are ok with that then either you don't have children or you are kidding yourself on.
I'm glad there are laws here that restrict such usage, it makes both safety and social sense. (Laws stated above by another user).

A beach.
A field.
A mountain.
An abandond place.
The desert (a lot of that around your place I hear).
Not that close to your neighbours. Even if not illegal it's hardly the neighbourly thing to do.
