Is there any way to totally lock the gimble, to protect it when doing fast movements?

I want to fly fast. And do stuff fast so I don’t want to overload the gimble, is there any way in litchi or DJI?
 
No. You need not be concerned, you won’t be able to command the AC to do anything that might harm the gimble. The smoothness of your video should be a good indication of the corrections the gimble is able to perform in flight.
 
Technically you may have to disable all the gimbal motors before mechanically locking the gimbal else you might face gimbal overload conditions. Is this easy to do? No. You might break the ribbon cables.

Not sure if unplugging the top grey cable would disable power to motors, never tried and may be risky.

hey man maybe you need a sportier drone like the new mavic and not a camera drone like a p3. just sayin'
