You plotted the number of GPS satellites but neglected to include the GLONASS data - it had 3 of those, for a GNSS total of 8:

So if I'm reading that correctly did we actually switch to GPS mode with only 5 satellites?

No. It achieved a navHealth of 4 and "gps_used = true" with 5 GPS satellites and 3 GLONASS satellites - that's 8 satellites.
