This is for the people who don't know what I'm talking about.

Salmon season is just like your local tomato season or your local strawberry season or your local corn season or your local asparagus season or any other season. You want to get it IN SEASON because that's when it's best.

Once a year, the wild Pacific sockeye run up river to spawn in the Pacific Northwest and this opens the Sockeye Salmon season. They are in such abundance and so many are caught that they're jetted fresh to major cities all over the USA. Yes - they are shipped FRESH, not frozen. If you've never had FRESH wild salmon, this is your opportunity. It is outstanding, and acquiring it is worth the trouble and expense once a year. This has been going on for about 20 years or so, but still, there are many who don't know about it.

The Copper River salmon are the best known, but really, any wild salmon from any river in Alaska, Canada, or Washington is just as good, provided it's wild and fresh. So check your local stores and try to find some. Be sure what you're buying is WILD and FRESH. Those are the key words. The season is in it's second week already and will be over in about two weeks. Prices are high but tend to go down towards the end of the season.

It is so good that some people buy it and put it in the freezer and that is just silly. Buy it and EAT IT. That is the whole point of getting it fresh.

Good luck!
