I would imagine the air to be quite unstable and turbulent behind one of these things, not to mention the amount of backside wind propulsion the turbine puts off...

The wind turbine shouldn't be having any impact on winds up where your Phantom was.
Perhaps you are looking at a compass twitch from the electromagnetic radiation around the generator.
