What is involved in switching the camera that comes with the drone for a GoPro and is it even worth it

Depends how you define worth it?
The cable to do the conversion is $10.
You will need a H33D gimbal.
It the current climate, I think its best to get a used P3A for aerial and leave the GoPro for grounded action shots.
