I believe that when DJI updated the Go app to v 2.7.0 or 2.7.1, they changed the wording, but see the 2 items I've cicled in the pic below.
I cannot understand them.
1) Gimbal Tilt (0-100). All that changes when I reduce the setting is the speed at which the camera pitches up and down. Lowering this setting slows the camera tilt speed down.
2) Gimbal Tilt SmoothTrack (0-30). All that changes when I increase the setting is exactly the same as #1 above. Increasing this setting slows the camera tilt speed down.
It seems from memory, that before the Go app updates from 2 weeks ago, #1 used to be labeled either Gimbal Speed or Gimbal Tilt Speed...

Just poking around in the app (not connected) and see this additional gimbal speed setting. This is probably the one I was remembering that was for the tilt speed.
