The 35mm equivalent lens is fixed. I can set different aperture or speed but FOV won't change. FOV will change with distance to the subject.

Much too high.
If you go up 400 feet, you can get a single image of an area 400 x 600 feet.
To get the farm on a single looking-down image, you would have to fly .
You would have to go up 1 mile to get an image of an area 1.5 x 1 mile
What you need for the task is specialised software to fly a mapping mission and create a huge composite image from many individual images.
It could be done, but it would be a big job.
To map a 1 mile square area from 400 feet would take 5 or 6 batteries and generate a few thousand individual overlapping images.
Go up 400' (AGL) and 400' - 1,000' outside your property, and you will get a very nice oblique shot of your property. If you want a nadir shot, you're going to have to go a lot higher than 400' - over a mile by my calculations.

Use DroneDeploy or pix4D to take a series of pictures and stitch them in post.
Is this for real estate or mapping? I assumed the former. But if you're mapping, then that changes everything. Please clarify.

Yes DroneDeploy is for mapping, but they do have flight loads that can do vertical as well. The only two that I can think of that they do not have that many other programs do our orbit and facade inspection. You can use the flight app for free, but need a paid account to process them. Although you can just ditch in Microsoft ICE which is free.
