Is there a way to adjust the scale on the controls to make the movements a little more fluid? Maybe from 100% > 75%?

You can play with the "attitude gains" settings in the Assistant. The lower the % the more "mushy" the aircraft's response gets, the higher the % the tighter and quicker. Unfortunately there's no adjustment for yaw - it would be good if there were!
Don't adjust the "Basic Gains" as these dictate how the aircraft responds to environmental changes rather than your inputs.
