I understand that batteries should be stored around 30%. I have 3 batteries and fly about 1-2 a week. When you don't fly for a couple of weeks is it recommended to bring the batteries up to 30%, and then let them drain down from that point?

By default, the batteries will discharge to a safe storage level after 10 days. That discharge process days 1-2 days. You can decrease that period if you'd like via the setting in the DJI Pilot app (I set mine to 2 days).
About 50% is the preferred level for storage.
