is it just that I can't find it, or is it impossible to have Litchi take pictures periodically during an orbit mission?

Not easily. You can try settin timed shots first in the DJI go app then switching to litchi to control the orbit. Alternatively, draw a circular path and let litchi create the waypoints then set you poi and have litchi snap a picture at each waypoint (make sure that straight lines is selected in mission parameters.
