So you guys are adjusting ISO and aperture together to get the perfect shot? Feels like that's quite tricky to do manually. Having just one variable to control yourself would be a little nicer.

Is it better to adjust exposure on the fly vs aperture? I'm new to the world of manual mode videos so not sure which is best.

You can go into settings on DJI Go app and adjust "Gimball Roll" untill it is perfectly level. Most people suffer from horizon tilt, best is to just adjust it manually before each flight.

Someone did the maths on it, apparently it doubles your range, but also makes your signal directional instead of omni directional.
