I'm looking to take my drone to the beach and I'm curious if you have any beach or water specific tips.

-where are you landing so you don't get any sand near the drone?

-recommended heights for good video over beach and water?

-close to water video height?

I try to always catch it. Let it hover in front of you, grab a leg with your right hand and chop the left stick to kill the props. Taking off is the other issue. I tried to take off from on top of my car but the metal confuses the compass.

As far as height, it depends on what you are filming. Just make sure there aren't a lot of people around.

I use a mat to take off from and hand catch it when landing.
Don't fly near people.
I generally fly at 100mtrs and watch out for seagulls when cruising up and down the coast line (lot of cliffs in my area).
I don't get lower to the water than 20 mtrs to allow for waves sneaking up behind me and sea spray.
My RTH is set at 30mtrs above the highest cliff.
Fly into the wind going out to manage your battery.
 
I'm heading to the beach tomorrow. I didn't even thing about taking off and landing. What does everybody think about taking off from the top off the drone case?

A peice of 1/8 to 1/4" plywood or similar makes a perfect launch pad, even serves double duty as a handy screed to get the sand level before you place it.

As has been said, had catch is the best practice over sand.

How high you fly is your decision based on what you have in mind. Just remember the barometer can be off so allow a safety margin. I don't go lower than 10m unless I am close enough to judge height comfortably.

Good thing about flying close to the ocean is provided the horizon is in sight you can use it to judge height of potential obstacles, if they appear lower than the horizon you have a great chance of clearing them at your current altitude.

Pay close attention to other AC movements. Yesterday I saw to AC (police helicopter and shark patrol) both well below 400ft, if I said they were at 200 that would be a generous estimation.

Given people at the beaches tend to be wearing minimal clothing don't fly close even to go over, they might suspect you are pervimg, most don't realise how small they appear in the frames with the wide angle of view. The exception might be the one Sheila who suggested I was filming her (you could have seen her from the moon).
 
It's a soft backpack case with foam to provide stiffness (sunnyvee). I'm heading to the Fire Island Lighthouse - so there will be other places to take off but I did want to go buy the ocean too.

I took off and landed from the parking lot right behind the pier over by some bathroom. Nice little patch of concrete right off the walkway. And think about some ND filters too. With the sun out, sand is bright!

Agree - I was down the coast last week and twice had shark patrol helicopters come by exceptionally low ~ 2/300 ft, but they have right of way and got it! Just be aware. I hand take off and hand land if nothing flat around too, but that's very rare. Followed a large manta last week, ~30 feet up, it was dead calm and clear with no wind though.
