Hello, very new to drones, can anyone recommend an App to use with the phantom 4

The usual app for most flying and photographing is DJI Go 4.
It's a great app and will do most of the things, most flyers need for most of their flying.
There are other specialised apps for particular missions that DJI Go 4 doesn't cover.

Do you need an app for surveying and mapping? Or just general flying?

For general flying, DJI GO 4 works great.
