Any color correction tips/recommendations?

Does anyone have any tips for achieving optimal color correction/saturation/brightness, etc. in post production? (especially in Final Cut Pro).

When I shoot video with my P3P, I make sure the histogram has all the peaks in the middle (so that the whites are no true whites or blacks). But then my videos all seem a little "washed out". I try using auto balance in Final Cut Pro but it doesn't look right to me, it seems pretty inconsistent. And when I do it myself it usually winds up being too dark.

I'm also having a hard time trying to figure out how to make it look best on a variety of devices. On some of my computers the output looks too dark, while on other too light. I know everyone has their screens set differently but I'm wondering if there's a golden rule for what you should be shooting for.

Here's a sample video I did last weekend just testing different approaches to a few landmarks. For all of these I'm using a SRP 16/8 gradient ND filter. It doesn't look terrible... but it has no "pop".
