    APilot's answer is the solution. I tried the cable from my Nintendo Switch and it worked fine. Apparently the cable that comes with the Essential PH-1 is incompatible, but other cables work fine.

    It seems to be working pretty well after straightening the antenna to be parallel with each other, turning off wifi on my phone and pointing it perpendicular to the drone. I was able to fly out to about 2000 ft away without issue.

    Other than the video drop out issue I haven't really noticed any problems so far. Also, if it is just an Android vs iOS thing, I'd expect that the problem would go away if I hooked up to the HDMI port directly. I'm not sure how the choice of phone OS would impact the radio transmission...
