Why do my camera setting change?

I must be doing something wrong. I set my camera to photograph in RAW but for some reason, it switches to JPEG then another shot taken later on will switch back to RAW. Can anyone tell me what's happening? I never want to shoot in JPEG mode but it is the default, I wish there was a way to make RAW the default.

Just a guess here. RAW files, by their nature of containing a lot more info than a jpeg, are larger files and therefore take longer to write to the card. If you take a shot in RAW, then take another before the first one’s written to the card, it may be that it shoots the next one in jpeg just so it doesn’t miss the shot (since it can’t keep up with multiple RAW images in too short of a time frame.) Once everything is written, it switches back to RAW.
 
Now I feel really stupid. :)
I'll give it a try and let you know what happens.

I was just flying last week and it worked fine. I have no idea what was going on, probably something I was doing wrong.
