What do I need to adjust to get smoother panning shots? I have already slowed my gimbal wheel, but sometimes my videos have a slight jerk to them instead of a smooth steady motion when turning from side to side.

Look into adjusting the expo settings for the controller in the app.
You can adjust the sensitivity of the joysticks to be able to make small movements more easily.
