Do you think it's possible? Sometimes I just feel like flying it without a big heavy gimbal and a heavy gopro. I saw cameras used by mini quads that have a SD card on board for recording.

Why do you ask "Do you think it's possible?" Of course it is possible. Just make removable connectors for everything instead of soldering in place.
