Bought the P3S Iove it really fun to fly. But when i fly over a drastic elevation change with the drone, will it drop? Here are the coords( 42.708076 , -114.804451) for the spot over a canyon nearby where my friends kayak drop is close to 180' or will it hold while flying over?

No it will not drop. It will hold the current altitude until you manually manipulate the controls.
The altitude depicted is simply a barometer derived height with respect to your launch point. The AC has no idea what's below it or how far away it is.
