Seems to me the length of time it takes the battery to say you have 15 minutes left and the time it says its going into emergency landing mode at 5 minutes left are not quite 10 minutes apart.

Having had two birds encounter issues with suddenly short-lived flights, has cause me damage and loss of one bird.

Anyone ever bother to graph the actual times the battery can deliver?

This is a 'fools errand' (figure of speech, please no offense intended).
Battery drain, etc. is too dynamic and will change as the battery ages not to mention local weather conditions and such.

I appreciate what they are trying to do with these graphs but like the Altimeter data, it should be met with skepticism and caution.

You have observed and experienced this first-hand.

It's best to monitor your battery as you fly. Battery discharge times will vary by battery, flying style, current weather conditions, etc.
