Are there any other developers out the that have ever looked at the data the phantom sends to the app? Or reverse engineered any part of the Vision App?

I've got an interesting idea which may enable future use of this https://developers.google.com/cardboard/ with the vision for FPV. It's essentially the starting point of Android VR using an existing phone, looks daft but it's very early stages of the hardware!

I'm going to have a go at capturing some data later to see what's going on, either by rooting a device and using TShark or by airodump-ng or maybe ettercap-ng might get in the middle. I'm expecting it to be UDP and reversing that part of the app might help us.

The droneexpert guys have. They've replaced the analog video feed from the v+ camera and strapped on a number of other cameras. So you could conceivably use a video mixer with two cameras and get stereo output to the DJI app.
