Gain and Sensitivity settings....can anyone give a tutorial for a clutz ?

i have done some reading on the gain and sensitivity settings but my old brain tells me to not mess with this ! can anyone give an easy to understand explanation of what happens when those settings are changed from default ? i would like to " mellow" my p3s out a bit, but dont want to have an " oh crap" moment.

The short version is:
Don't touch the gain settings
Sensitivity allows you to vary the joystick sensitivity so that it is less sensitive close to the centre.
This is so that you can have more precise control for small movements.
