Can we estimate FPV R and P values to actual wind speed?

As we can see in the middle of iOSD Mini FPV monitor on DJI transmitter, Pitch(P) values and Roll(R) values. Can we estimate how much wind speed that's hitting Phantom V2 while flying in the air and it is trying to hold her attitude?
I sometimes got P value of 5 or -5 and R value of the same.
 
Probably not very accurately, no. Too many other variables including turbulence, orientation relative to the wind direction, stick inputs.

That's right I can't get accurate wind direction and actual wind speed at that altitude where P2 is holding. Because of strong gust winds, video footage becomes shaky - if I can find and fly in to wind direction, better a bit. But, according to my experience so far; with P2 and Zenmuse H3-2D gimbal with GoPro Hero3+ black, it is best to shoot videos at almost wind calm conditions.
