I can't figure out exactly what they are selling there. Is it any different from the multitude of other mapping services available for use with any drone that can run waypoints?
Short answer, which others have said. It's not going to be useful for spotting birds in real time. Even on an iPad air, I can't see a bird until I'm basically right on top of it.
You might be able to pick them out if you take photos and then review the full resolution versions later.
Can't speak to the usefulness of Vertical Studio, but Autopilot 3 with the "Airspace" feature works pretty dang well too. Downside is you need another connected iOS device. Upside is that it works.
I don't think FAA registration is even an option for non US residents. Hell, most of the people I know who fly aren't bothering with that crap either. As for me, I'm not going to bother. It's all a bunch of fluff.
It is possible to edit 4k on underpowered hardware in some software by setting up proxy files. You basically do your edits with a low res version, then use the full res source files when you go to render.
Also check out Maps Made Easy. It flies a grid pattern over a selected area and captures downward facing photos that you can stich together using their cloud or any number of different mapping programs.
