I hadn't specifically searched for 4K video the 4K phantom ones I had found were all 1080P

Don't forget that YouTube recompresses uploaded video and also creates copies at various resolutions. I have not seen a YouTube video at any resolution higher than 1080P (1920 x 1080)
It seems to be better but it's hard to tell when you are yawing, have a look at video with the camera horizontal and when you are flying either directly forward or backward.
I can't help you with the one you have driving the green LEDs as I don't have any information on it. You're on your own with that one.

That looks pretty basic. It may survive an over voltage input, it depends on how much headroom there is in the components.
One question comes to mind, the remote controller is infrared and requires line of sight to operate. Infrared and sunlight don't play together.
It has been suggested that an advanced IMU calibration may help as might a gimbal calibration.

The gimbal should be holding the camera horizontal, in which case the horizon line in the video would be horizontal. Your videos have a horizon line sloping down to the left.
