Haven't seen any specific video, but DJI employees have definitely confirmed that you can use the Mavic's camera and gimbal with the unit folded up.
Not really a big surprise, since you can record on the Phantoms without the motors running. :)
Define 'fix the focus' - you mean lock it in a specific position like you would with exposure? I looked through the pre-release manual and didn't see any reference to it, but then again, there are many things missing from this document. I can say that you're probably not going to have the Mavic...
For sure. There's no substitute for experience and knowledge; it's the only way you can guarantee the safety of your bird and everything it gets near (including yourself). Best of luck - I hope you're as excited for the Mavic Pro as I am!
Some general advice I can give, both specific to multirotors with some common sense thrown in for good measure:
Read the manual, several times.
Try out each mode in a controlled environment first, before deciding to do it "live" in the field.

While DJI's C-to-µ cable may not be available for launch, you can use a C-to-A cable (maybe your phone came with one?) to plug into the USB-A port located on the bottom of the controller.
Yes, it is digital zoom, much like your phone. You can also pinch to zoom like you do in your camera app. I believe the zoom is only available in 1080p (because it's scaling down from 4K), but don't quote me on that.
The problem is two-fold. First is the focus issue, which has been covered extensively. The second one is that the Phantom line has always been oversharp. While many people like this, many of the guides and other suggestions on how to get the best, most natural image quality have always suggested...
Just to address the second half of your comment, early reviews have been with iPhones because the Mavic isn't currently supported on the Android version of the DJI Go app. I'm sure that'll change as we get closer to release.
For what it's worth, the Mavic does have some sort of sensor or metric (perhaps just identifying how hard it's pushing against wind to stay steady) that warns you of excessive wind. It's possible they are relying on that to address that aspect.
