I was wondering the same thing. To some degree I purchased the p2v+ for the ease (easier) of use. Hopefully it's pretty straight forward when you do upgrades. I did upgrade the gimbal firmware but I don't believe there was any caveats to doing so.

I think you are right about the iPhone. 1.0.37 is the version I have also. The "about" screen doesn't give us the ability to update it. Guessing it has to go through Apple to become approved before we can download it.
Direct from DJI ordered 4/9 arrived last Friday, it was at the latest firmware aside from the gimbal one which I ended upgrading.
So you might end up getting the latest firmware anyway.
I'm not sure if you can downgrade, I've not looked.
