Grading compressed video is just like trying to work on jpgs in Lightroom, with the added problem that the amount of noise/artifacts that you can get away with in a still image would look terrible in video (the human visual system is very sensitive to dynamic noise).
Again it really depends what you're after. I personally do slight adjustments on all stills and video that I shoot, but it's really up to you. You can grade any footage, it's just that shooting in log gives you more latitude in some areas and less in others.
