Recreational flying in Ireland is not a problem, you will have no problems with bringing it in. You will need a permit from the IAA for commercial or any flights over/in settlement areas.

It really depends on what you want to do with the camera. For any descent video it needs to be on a gimbal. For the P2s you have the zenmuse gimbal for GoPro and the other Phantoms you are stuck with the built in cameras.

Kinda hard to mount a smartphone to phantom and keep it steady. Great quality pics I am sure. Let us know with a few pics if you manage to do it. With the added payload on an Inspire it's possible. I fly with a 24 mp Sony A6000 attached to the belly.
I use PC Ground Station on a P2 for nearly all my work (Inspire now too with 3rd party beta software), I presume functionality is similar.
All my mapping missions start manually by getting the P2 in the air and testing the basic control functions and looking out for any odd flight...
